Scale

Base Ingredients

  • 2/3 cup creamy peanut butter
  • 1 cup old fashioned oats
  • 1/2 cup ground flax seeds
  • 2 tbsp honey

Mix-ins Options (choose one 1/2 cup per batch)

  • 1/2 cup chocolate chips
  • 2 tbsp cocoa powder + 1/4 cup white chocolate chips + 1/4 cup dried cranberries + zest and juice of 1/2 lemon + 2 tsp poppy seeds (reduce oats by 1/4 cup)
  • 1/4 cup mini M & M’s + 1/4 cup mini chocolate chips
  • 1/4 cup peanuts + 1/4 cup raisins (reduce oats by 1/4 cup)
  • 1/4 cup chopped almonds + 1/4 cup unsweetened shredded coconut + 1/4 cup chocolate chips + 1/4 cup sprinkles + 2 tbsp vanilla protein powder

Instructions

  1. Combine Ingredients: In a large mixing bowl, add 2/3 cup creamy peanut butter, 1 cup old fashioned oats, 1/2 cup ground flax seeds, and 2 tablespoons of honey. Stir well until the mixture is thoroughly combined.
  2. Add Mix-ins: Choose your preferred 1/2 cup of mix-ins from the options and fold them gently into the peanut butter mixture ensuring even distribution.
  3. Chill the Mixture: Place the combined mixture in the refrigerator for 15-30 minutes. This chilling step firms the mixture to make rolling easier. Alternatively, slightly dampen your hands to prevent sticking while rolling.
  4. Form Energy Bites: Using your hands, roll the mixture into 12 equal-sized bite-sized balls. Make sure they are compact and hold their shape well.
  5. Storage: Store the energy bites in an airtight container in the refrigerator. They can be kept fresh for up to one week for convenient snacking.

Notes

  • You can customize these energy bites by swapping different mix-ins according to your taste and nutritional preference.
  • Chilling the mixture is crucial to help the bites hold their shape when rolled.
  • Slightly damp hands will help minimize sticking when forming the bites.
  • If you want to keep the bites longer, consider freezing them in a sealed container for up to a month.
  • For a vegan version, replace honey with maple syrup or agave nectar.
