Instructions

  1. Prepare the Cucumbers: Wash 4 cups of pickling cucumbers (about 1.5 pounds) and pat them dry with a clean towel. Slice the cucumbers into ¼-inch thick chips using a sharp or serrated knife for even slices. Set the slices aside.
  2. Make the Brine: In a saucepan, combine 2 cups white distilled vinegar, ¾ cup water, ¾ cup white granulated sugar, 3 tablespoons kosher salt, 1 ½ tablespoons whole black peppercorns, 1 tablespoon mustard seed, and 4 slit Thai chilies. Stir with a wooden spoon and bring this mixture to a boil over medium heat, stirring until the sugar and salt dissolve (about 5 minutes). Turn off the heat and let the brine cool to room temperature.
  3. Prepare the Jar: Take a clean 1-quart glass jar with a lid. Lightly mash 3 garlic cloves with the flat side of a knife to release flavor and place them in the jar. Then, tightly pack the cucumber slices into the jar leaving some space at the top.
  4. Add the Brine: Pour the cooled brine over the cucumber slices until they are fully submerged. Use a spoon to press cucumbers down if needed. Seal the jar tightly with the lid.
  5. Place in the Fridge: Refrigerate the jar for at least 24 hours to allow the flavors to develop and the pickles to become crisp and flavorful.
  6. Enjoy: Open the jar and enjoy the crunchy, sweet, and spicy pickle slices. They make a perfect accompaniment to burgers, sandwiches, or can be eaten as a zesty snack.
