Pickles
- 4 cups pickling cucumbers, sliced ¼-inch thick (~1.5 pounds)
Brine
- 2 cups white distilled vinegar (16 fluid ounces)
- ¾ cup water (6 fluid ounces)
- ¾ cup white granulated sugar (6 ounces)
- 3 tablespoons kosher salt (1.5 ounces)
- 1 ½ tablespoons whole black peppercorns (0.75 ounces)
- 1 tablespoon mustard seed (0.3 ounces)
- 4 Thai chilies, slit open (about 0.1 ounces)
Additional
- 3 cloves garlic, lightly mashed (about 0.5 ounces)
- Prepare the Cucumbers: Wash 4 cups of pickling cucumbers (about 1.5 pounds) and pat them dry with a clean towel. Slice the cucumbers into ¼-inch thick chips using a sharp or serrated knife for even slices. Set the slices aside.
- Make the Brine: In a saucepan, combine 2 cups white distilled vinegar, ¾ cup water, ¾ cup white granulated sugar, 3 tablespoons kosher salt, 1 ½ tablespoons whole black peppercorns, 1 tablespoon mustard seed, and 4 slit Thai chilies. Stir with a wooden spoon and bring this mixture to a boil over medium heat, stirring until the sugar and salt dissolve (about 5 minutes). Turn off the heat and let the brine cool to room temperature.
- Prepare the Jar: Take a clean 1-quart glass jar with a lid. Lightly mash 3 garlic cloves with the flat side of a knife to release flavor and place them in the jar. Then, tightly pack the cucumber slices into the jar leaving some space at the top.
- Add the Brine: Pour the cooled brine over the cucumber slices until they are fully submerged. Use a spoon to press cucumbers down if needed. Seal the jar tightly with the lid.
- Place in the Fridge: Refrigerate the jar for at least 24 hours to allow the flavors to develop and the pickles to become crisp and flavorful.
- Enjoy: Open the jar and enjoy the crunchy, sweet, and spicy pickle slices. They make a perfect accompaniment to burgers, sandwiches, or can be eaten as a zesty snack.
Notes
- For best results, allow pickles to sit refrigerated for at least 24 hours before eating.
- Use fresh pickling cucumbers for optimal crunch.
- You can adjust the number of Thai chilies to control the heat level.
- The pickles should be kept refrigerated and consumed within 2 weeks for best quality.
- Ensure the brine is completely cooled before adding to cucumbers to avoid soggy pickles.
