A delightful and festive Firework Oreo Cheesecake recipe that combines the richness of cream cheese with the crunch of Oreo cookies, topped with a colorful display of sprinkles and pop rocks.

Oreo Crust

  • 25 Oreos (red velvet or regular, double stuffed)
  • 6 tbsp butter, melted
  • 1/4 tsp gel food coloring (if using regular Oreos)

Cheesecake Filling

  • 32 oz cream cheese, softened
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 8 oz Cool Whip
  • 16 Oreos, chopped

Instructions

  1. Oreo Crust: Crush Oreos in a processor, then add melted butter and food coloring if using regular Oreos. Take 16 Oreo cookies, chop, and set aside. Pat down in an 8×8 dish.
  2. Cheesecake Filling: In a KitchenAid mixer, mix softened cream cheese for 4-5 minutes until creamy. Slowly add in sugar and vanilla. Fold in all but 1/2 cup of chopped Oreos and Cool Whip.
  3. Topping: Sprinkle remaining chopped Oreos on top. Add desired amount of sprinkles or pop rocks. Cover and refrigerate for 4 hours to set up.
  4. Slice and Serve.

Notes

  • For a more vibrant color, use red velvet Oreos for the crust.
  • Feel free to customize the toppings with your favorite sprinkles or candies.
