For the Crust

  • 2 pre-made (or homemade) pie crusts
  • 1 egg (for egg wash)

For the Filling

  • 1 lb shrimp, peeled, deveined & chopped
  • ½ cup onion, finely diced
  • 3 garlic cloves, minced
  • ½ cup bell pepper, diced
  • ½ cup mushrooms, chopped (optional)
  • 3 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups heavy cream (or whole milk)
  • ½ cup seafood or chicken broth
  • 1 tsp Old Bay seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp parsley, freshly chopped

Instructions

  1. Prepare the Crust – Preheat your oven to 375°F (190°C). Lay one pie crust into a 9-inch pie plate, lightly prick the bottom with a fork, and set it aside.
  2. Cook the Filling – In a skillet, melt butter and sauté onion, garlic, bell pepper, and mushrooms. Add flour, then whisk in cream and broth. Season, add shrimp, cook until pink, and fold in parsley.
  3. Assemble the Pie – Pour the shrimp filling into the crust. Cover with the second crust, seal edges, crimp with a fork, and cut slits on top. Brush with beaten egg.
  4. Bake the Pie – Bake for 35–40 minutes until golden brown and crispy.
