For the Crust
- 2 pre-made (or homemade) pie crusts
- 1 egg (for egg wash)
For the Filling
- 1 lb shrimp, peeled, deveined & chopped
- ½ cup onion, finely diced
- 3 garlic cloves, minced
- ½ cup bell pepper, diced
- ½ cup mushrooms, chopped (optional)
- 3 tbsp unsalted butter
- ¼ cup all-purpose flour
- 1 ½ cups heavy cream (or whole milk)
- ½ cup seafood or chicken broth
- 1 tsp Old Bay seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp parsley, freshly chopped
- Prepare the Crust – Preheat your oven to 375°F (190°C). Lay one pie crust into a 9-inch pie plate, lightly prick the bottom with a fork, and set it aside.
- Cook the Filling – In a skillet, melt butter and sauté onion, garlic, bell pepper, and mushrooms. Add flour, then whisk in cream and broth. Season, add shrimp, cook until pink, and fold in parsley.
- Assemble the Pie – Pour the shrimp filling into the crust. Cover with the second crust, seal edges, crimp with a fork, and cut slits on top. Brush with beaten egg.
- Bake the Pie – Bake for 35–40 minutes until golden brown and crispy.
