Ingredients

Scale

Main Ingredients

  • 1 Rotisserie Chicken, shredded
  • 10.5 oz Cream of Mushroom Soup
  • 10.5 oz Cream of Chicken Soup
  • 14.5 oz French Style Green Beans, drained
  • 1 oz Lipton Onion Soup Mix
  • 2 cups Chicken Broth
  • 2 cups Minute Rice, uncooked
  • 1 cup Refrigerated French Onion Dip
  • 3 cloves Garlic, minced

Toppings

  • 1 cup French Fried Onions, divided
  • 1/2 cup Parmesan Cheese (plus extra for topping)
  • 1 cup Cheddar Cheese, hand shredded

Instructions

  1. Preheat Oven. Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Combine Ingredients. In a large mixing bowl, add the shredded rotisserie chicken, cream of chicken soup, cream of mushroom soup, Lipton onion soup mix, half of the French fried onions, drained green beans, chicken broth, minced garlic, uncooked Minute rice, refrigerated French onion dip, and 1/2 cup Parmesan cheese. Lightly season with salt and pepper, then stir everything together until the mixture is evenly combined.
  3. Prepare Casserole Dish. Grease a 9 x 13-inch baking dish thoroughly. Pour the prepared mixture into the dish and spread it out evenly to create a flat surface.
  4. Add Toppings. Sprinkle additional Parmesan cheese over the top of the mixture. Evenly distribute the shredded cheddar cheese and the remaining French fried onions across the casserole.
  5. Bake. Place the uncovered casserole in the center rack of your preheated oven. Bake for 35 minutes, or until the dish is hot and bubbly.
  6. Rest and Serve. Remove the casserole from the oven and let it rest for 5-10 minutes. Optionally garnish with dried parsley. Serve warm and enjoy your comforting French Onion Chicken and Rice Casserole!

Notes

  • Use leftover rotisserie chicken for convenience and flavor.
  • Ensure green beans are well drained to avoid excess moisture in the casserole.
  • Minute rice cooks during baking, so no pre-cooking is needed.
  • For a crispy top, add French fried onions just before baking to prevent sogginess.
  • Allowing the casserole to rest after baking helps it set for easier serving.
