Sugar Cookie Crust:
- 1 1/2 cups all-purpose flour (plus extra for rolling)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Frosting:
- 1 (8 ounce) package low-fat cream cheese
- 2–3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
- 1 teaspoon vanilla extract
- pinch of fine sea salt
Toppings:
- fresh strawberries, blueberries, raspberries, blackberries, or any other desired fruit
- optional fresh honey, for drizzling
- Preheat Oven: Heat oven to 350°F. Grease a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
- Prepare Crust: In a medium bowl, whisk flour, baking powder, and salt. In a large mixing bowl, beat butter and sugar until light. Add egg, vanilla, and almond extract. Mix in dry ingredients. Press dough into pan, poke holes, and bake until golden.
- Make Frosting: Whisk together cream cheese, maple syrup/honey, vanilla, and salt.
