Sugar Cookie Crust:

  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Frosting:

  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • pinch of fine sea salt

Toppings:

  • fresh strawberries, blueberries, raspberries, blackberries, or any other desired fruit
  • optional fresh honey, for drizzling

Instructions

  1. Preheat Oven: Heat oven to 350°F. Grease a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
  2. Prepare Crust: In a medium bowl, whisk flour, baking powder, and salt. In a large mixing bowl, beat butter and sugar until light. Add egg, vanilla, and almond extract. Mix in dry ingredients. Press dough into pan, poke holes, and bake until golden.
  3. Make Frosting: Whisk together cream cheese, maple syrup/honey, vanilla, and salt.
  4. Assemble: Spread frosting on cooled crust. Top with fruit and drizzle with honey.
