  • 3/4 teaspoon paprika
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the chicken to achieve a crispy, golden exterior and juicy interior.
  2. Season Chicken: Remove the chicken thighs from the refrigerator, pat them dry with paper towels to remove excess moisture, then season both sides generously with kosher salt and ground black pepper. Let them rest for a few minutes to absorb the seasoning.
  3. Prepare Garlic Dijon Sauce: In a large mixing bowl, whisk together Dijon mustard, honey, extra virgin olive oil, minced garlic, ground coriander, paprika, black pepper, cayenne pepper if using, and a pinch of salt until fully combined and smooth.
  4. Coat Chicken in Sauce: Add a few pieces of chicken at a time to the bowl with the sauce. Using tongs, toss each piece thoroughly to coat it evenly.
