Ingredients

Scale

Cookie Base

  • 1 (16.5 ounce) package refrigerated sugar cookie dough, softened (or 2 heaping cups homemade sugar cookie dough)

Icing

  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Toppings

  • Fresh fruits: Kiwi (sliced)
  • Clementines (peeled and segmented)
  • Blueberries
  • Strawberries (sliced)
  • Blackberries
  • 2 tablespoons honey, for brushing over fruit

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Line a 16×12-inch baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Shape Cookie Dough: Place the softened sugar cookie dough on the prepared baking sheet. Shape it into an egg form about 1/4 inch thick, measuring approximately 15 inches long and 11 inches wide, to create the giant Easter egg base.
  3. Bake Cookie: Bake in the preheated oven for about 18 minutes, rotating the pan halfway through to bake evenly. The cookie should be golden brown around the edges and set in the middle.
  4. Cool Cookie: Remove the baking sheet from the oven and let the cookie cool completely on the sheet before decorating to prevent melting of the icing.
  5. Prepare Icing: Using an electric mixer with a whisk attachment, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract and mix until fully incorporated.
  6. Spread Icing: Evenly spread the cream cheese icing over the cooled egg-shaped cookie, creating a smooth, even layer to hold the toppings.
  7. Decorate with Fruit: Arrange the fresh fruits (kiwi slices, clementine segments, blueberries, strawberries, and blackberries) on top of the icing, designing colorful patterns that mimic the look of a decorated Easter egg.
  8. Glaze Fruit: Lightly brush the fruit with honey to add shine and a touch of sweetness, helping to keep the fruit fresh-looking.

Notes

  • You can substitute homemade sugar cookie dough if preferred.
  • Ensure the cookie base is completely cooled before adding the icing to avoid melting.
  • Feel free to customize the fruit toppings with seasonal or favorite fruits.
  • The honey glaze adds shine but can be omitted if desired.
  • Store any leftovers covered in the refrigerator for up to 2 days.
