Ingredients

Scale

Blueberry Filling

  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Dough

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup warm milk (about 105-115°F)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted

For Frying and Finishing

  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. Prepare the Blueberry Filling: In a small saucepan, combine blueberries, 1/4 cup sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly until thickened to a jam-like consistency, about 5-7 minutes. Remove from heat, transfer to a bowl, cover with plastic wrap placed directly on the surface, and refrigerate until firm, at least 1 hour or overnight.
  2. Make the Dough: In a large bowl, whisk together flour, 2 tablespoons sugar, yeast, and salt. In a separate bowl, mix warm milk, egg, and melted butter. Combine wet and dry ingredients until a shaggy dough forms.
  3. Knead and Rise: Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place in an oiled bowl, turning to coat, cover with plastic wrap, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Fill the Doughnuts: Punch down dough and roll out to about 1/4-inch thickness. Cut into 2-inch circles. Place 1 teaspoon of chilled blueberry filling onto half of the circles.
  5. Seal for Success: Moisten the edges of the filled circles slightly with water. Place an empty circle over each filled one and pinch edges tightly to seal, then roll into smooth balls ensuring no gaps.
  6. Second Rise: Place dough balls on a floured baking sheet, cover loosely with plastic wrap, and let rise for 20-30 minutes until slightly puffed.
  7. Fry the Doughnuts: Heat vegetable oil in a heavy pot to 350°F. Fry 3-4 doughnuts at a time for 2-3 minutes per side until golden and cooked through. Drain on a wire rack lined with paper towels.
  8. Finish and Serve: Dust warm doughnut bites generously with powdered sugar and serve immediately for the best taste and texture.

Notes

  • Ensure blueberry filling is fully chilled and thickened to prevent leaks during frying.
  • Properly seal edges to avoid filling oozing out in hot oil.
  • Maintain oil temperature at 350°F for optimal frying results.
  • Serve doughnut bites warm for best flavor and texture.
  • Leftovers can be stored in an airtight container and gently reheated.
