Ingredients

Scale

For the Chicken Patties

  • 1 pound ground chicken
  • ¼ cup diced red onion
  • 3 garlic cloves, minced
  • ¼ cup sun-dried tomatoes, finely chopped
  • 1 cup baby spinach, roughly chopped (loosely packed)
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil

Toppings and Assembly

  • Butter lettuce leaves
  • Tzatziki sauce
  • Crumbled feta cheese
  • Sliced onion
  • Sliced tomato
  • Sliced avocado

Instructions

  1. Make the burger patties: In a medium bowl, combine ground chicken, diced red onion, minced garlic, finely chopped sun-dried tomatoes, roughly chopped spinach, chopped fresh dill, dried oregano, kosher salt, and ground black pepper. Mix everything thoroughly using your hands. Divide the mixture evenly and form 4 large, uniform patties to ensure even cooking.
  2. Cook the patties: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Once hot, place the patties in the skillet and cook for about 5 minutes on each side until they develop a golden brown crust and are cooked through to an internal temperature of 165°F (74°C). Alternatively, you can grill the patties, turning once, until fully cooked and nicely charred.
  3. Assemble the chicken burger: Lay butter lettuce leaves as a low-carb bun alternative. Place the cooked chicken patties on top, then layer with tzatziki sauce, crumbled feta cheese, sliced onion, tomato, and avocado according to your preference. Serve immediately while warm.

Notes

  • To ensure patties stay together while cooking, avoid overmixing the meat mixture.
  • For a spicier version, add a pinch of crushed red pepper flakes to the chicken mixture.
  • Leftover patties can be refrigerated for up to 3 days or frozen for up to 1 month.
  • If you prefer traditional buns, feel free to swap the butter lettuce with your favorite sandwich buns.
  • Ensure the chicken is fully cooked to 165°F (74°C) to avoid any foodborne illness.
