  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 2 teaspoons olive oil
  • 3 cups chopped seeded plum tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup minced fresh parsley, divided
  • 2 tablespoons minced fresh basil
  • 2 tablespoons lemon juice
  • 1 cup crumbled feta cheese, divided
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Cook the pasta. In a pot of boiling salted water, cook the spaghetti according to package directions until al dente. While the pasta cooks, prepare the sauce.
  2. Make the sauce. Heat the olive oil in a nonstick skillet over medium heat. Add the dried oregano and minced garlic, sautéing for one minute until the garlic is tender and fragrant. Stir in the chopped seeded plum tomatoes, sliced green onions, 2 tablespoons of the minced parsley, fresh basil, and lemon juice. Cook and stir the mixture for about two minutes until heated through, then remove from heat.
  3. Finish the spaghetti. Drain the cooked pasta well and return it to the pot or a large mixing bowl. Add the tomato mixture to the pasta along with 3/4 cup of crumbled feta cheese, salt, and pepper. Toss everything together gently to combine. Transfer to serving plates and sprinkle the remaining crumbled feta cheese and parsley over the top. Serve immediately to enjoy the fresh flavors.
