Ingredients

Scale

Marinade

  • 0.5 cup avocado oil
  • 4 cloves garlic, minced
  • 1 jalapeño, diced
  • 1 tablespoon fresh parsley, finely chopped
  • Zest of 2 limes
  • 2 teaspoons coarse salt
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper

Main Ingredient

  • 2 lbs jumbo shrimp, peeled and deveined
  • Juice of 2 limes

Instructions

  1. Prepare Marinade: In a large mixing bowl, combine 0.5 cup avocado oil, 4 minced garlic cloves, 1 diced jalapeño, 1 tablespoon chopped parsley, zest of 2 limes, 2 teaspoons coarse salt, 1 teaspoon paprika, and 0.5 teaspoon black pepper. Mix thoroughly to create a well-blended marinade.
  2. Marinate Shrimp: Add 2 lbs peeled and deveined jumbo shrimp to the marinade. Toss them well until each shrimp is fully coated. Cover the bowl and refrigerate for at least 20 minutes and up to 1 hour to allow flavors to infuse.
  3. Preheat Grill: Preheat your grill to medium-high heat, about 400°F. Once hot, clean the grates and lightly oil them to prevent sticking.
  4. Grill Shrimp – First Side: Remove the shrimp from the marinade, letting excess drip off. Place the shrimp either directly on the grill grates or thread them onto skewers. Grill with the lid closed for 2 to 3 minutes.
  5. Grill Shrimp – Second Side: Flip the shrimp over and grill for an additional 2 to 3 minutes. Cook until the shrimp curl into a loose C-shape and turn opaque and firm to the touch.
  6. Finish and Serve: Transfer the cooked shrimp to a serving platter. Immediately squeeze the juice of 2 fresh limes over the hot shrimp, gently tossing to coat evenly. Serve promptly and enjoy.

Notes

  • Do not over-marinate shrimp as acidic lime zest can start to cook them and affect texture.
  • Skewering shrimp helps with easy flipping and prevents them from falling through grill grates.
  • Grill shrimp quickly over high heat to maintain juiciness and tenderness.
  • Use fresh lime juice immediately after grilling to enhance flavor and add brightness.
