Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners to prepare for the crust.
  2. Prepare crust: Pulse about 10-11 Oreo cookies in a food processor until they become fine crumbs. Then add the melted butter and pulse again until the crumbs are evenly coated and combined.
  3. Form crust layer: Divide the Oreo crumb mixture evenly among the cupcake liners. Press the crumbs firmly into the bottom of each liner to form a compact crust layer.
  4. Make cheesecake filling: In a medium bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Add color: Mix in neon green food coloring a few drops at a time until you achieve your desired vibrant Grinch-green color.
  6. Fill cupcake liners: Spoon approximately 1/4 cup of the cheesecake mixture evenly over the prepared Oreo crusts in each cupcake liner.
