Crust

- Form crust layer: Divide the Oreo crumb mixture evenly among the cupcake liners. Press the crumbs firmly into the bottom of each liner to form a compact crust layer.
- Make cheesecake filling: In a medium bowl, beat the softened cream cheese with the sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Add color: Mix in neon green food coloring a few drops at a time until you achieve your desired vibrant Grinch-green color.
- Fill cupcake liners: Spoon approximately 1/4 cup of the cheesecake mixture evenly over the prepared Oreo crusts in each cupcake liner.
