Dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tablespoon banana pepper juice (from the jar of banana pepper rings)
  • 1 tsp garlic powder
  • 1 tsp oregano

Salad:

  • 1/3 cup banana pepper rings
  • 1/4 red onion, thinly sliced, or to taste
  • 1 cup cherry tomatoes, halved
  • 5 ounces salami, diced
  • 6 ounces deli turkey breast, diced
  • 8 ounces sliced provolone cheese, diced
  • 1 pound rotini pasta

Instructions

  1. Cook Pasta: Boil water in a pot and cook the rotini pasta until al dente. Drain, rinse under cold water, and set aside.
  2. Prepare Dressing: In a bowl, combine mayonnaise, red wine vinegar, banana pepper juice, garlic powder, and oregano. Whisk until smooth.
  3. Assemble Salad: Dice provolone cheese, turkey, and salami. Thinly slice red onion, halve cherry tomatoes, and chop banana pepper rings. In a large bowl, combine all ingredients, including cooked pasta. Pour the dressing over the salad, toss to coat evenly.
