Ingredients

Scale

Beef Mixture

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables and Sauce

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet and crumble it while cooking. Stir in the thinly sliced green onions and season with kosher salt, freshly ground black pepper, garlic powder, sriracha if using, and low sodium soy sauce. Cook until the beef is no longer pink and fully cooked through. Remove the cooked beef from the skillet and place it on a plate to set aside.
  2. Sauté the Brussels Sprouts: To the same skillet, add one tablespoon of avocado oil and heat over medium-high heat. Toss in the shredded Brussels sprouts and season with kosher salt and freshly ground black pepper. Sauté, stirring occasionally, until the Brussels sprouts become soft, browned, and caramelized, which should take about 6-8 minutes.
  3. Combine Beef and Sauce: Return the cooked ground beef to the skillet with the caramelized Brussels sprouts. Pour in the sweet chili sauce and the juice of half a lime. Stir everything together thoroughly so the beef and Brussels sprouts pieces are well coated with the sauce. Heat for an additional 1-2 minutes to combine the flavors.
  4. Garnish and Serve: Remove the skillet from heat. Optionally sprinkle sesame seeds over the top for garnish. Serve hot over rice or your preferred side dish for a complete meal.

Notes

  • Shredded Brussels sprouts cook faster and caramelize better than whole or halved sprouts.
  • Sriracha is optional and can be omitted or adjusted to taste for spiciness.
  • Use avocado oil or another high smoke point oil for sautéing.
  • This dish pairs well with steamed rice, cauliflower rice, or noodles for a complete meal.
  • For gluten-free, ensure soy sauce is tamari or gluten-free soy sauce.
