Habanero Peppers

  • 1/2 pound habanero peppers, chopped

  • 4 cups granulated sugar
  • 1 1/4 cups cider vinegar
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 3 ounces liquid fruit pectin
  • 4 drops food coloring (optional)

Instructions

  1. Habaneros: Add the habanero peppers to a food processor and pulse them until finely chopped, avoiding pureeing them.
  2. Pan: Transfer the chopped peppers to a large pan.
  3. Sugar: Add sugar, vinegar, lemon juice, and salt to the pan.
  4. Simmer: Bring the mixture to a boil, then simmer on low heat for about 10 minutes.
  5. Pectin: Increase heat to high, bring the mixture to a boil, stir in pectin, and boil for 1 minute while stirring constantly. Remove from heat.
  6. Coloring: If desired, add food coloring and stir.
  7. Ladel: Ladle the jam into sterilized jars and cover.
  8. Process: Process the jars in a boiling hot water bath for 10 minutes.
  9. Cool: Remove jars and let them cool overnight.
