In a large mixing bowl, whisk together 2 cups of the flour, granulated sugar, yeast, baking powder, and salt. In a separate bowl, combine the warmed milk, melted butter, red food coloring, vanilla extract, and the egg. Gradually pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. Knead the dough until smooth and elastic. Let it rise for 1-1½ hours.
Mix softened butter, brown sugar, and cinnamon to make a paste. Set aside. Optionally, prepare mini chocolate chips.
Roll out the risen dough into a rectangle. Spread filling, sprinkle with chocolate chips, roll into a log, slice, and arrange in a baking dish. Let rise for 30 minutes.
