Instructions

  1. Prepare the Gravy Base: Ensure you have enough turkey drippings and stock to total about 4 cups. If you don’t have enough drippings, make up the difference with chicken broth.
  2. Melt Butter and Whisk Flour: In a large skillet, melt the butter over medium-high heat. Once melted, whisk in a small amount of flour, then slowly add the turkey drippings/stock a little at a time, alternating with the flour. Whisk vigorously to prevent lumps from forming.
  3. Adjust Consistency: Start with about 3 to 3 ½ cups of drippings/stock, and adjust the amount as needed to reach the desired consistency.
  4. Thicken and Season: Bring the gravy to a simmer (avoid boiling) and let it thicken for a minute or two while stirring occasionally. If it becomes too thick, add more stock to thin it out. Season the gravy with freshly ground salt and pepper to taste. For an extra burst of flavor, add a teaspoon or two of chopped rosemary or thyme.
