Ingredients

Chicken:

  • 2 large chicken breasts, split lengthwise into thinner breasts; or 4 medium/small chicken breasts
  • 1 Tbsp olive oil
  • Kosher salt & black pepper

Gravy:

  • 3 Tbsp butter
  • 1 Tbsp chicken base (Better Than Bouillon brand recommended)
  • 4 Tbsp all-purpose flour
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (optional)

Side:

  • Instant Pot Mashed Potatoes

Instructions

  1. Prepare Chicken: Season chicken breasts with salt and pepper. Cook in a skillet until internal temperature reaches 165℉. Set aside.
  2. Make Gravy: In the same skillet, melt butter and chicken base. Add flour mixture to create a roux. Pour in chicken stock, water, and optional cream. Simmer until thickened.
  3. Combine: Shred chicken, return to the gravy, and simmer together.
  4. Adjust Seasoning: Taste and adjust seasoning if needed.
  5. Serve: Serve over mashed potatoes or rice, with optional sides like peas, garlic bread, or salad.

Notes

  • Do not add extra salt while making the gravy as there is enough salt from the seasoned chicken and stock.
  • Taste the gravy before serving to adjust seasoning if necessary.
