Chicken:
- 2 large chicken breasts, split lengthwise into thinner breasts; or 4 medium/small chicken breasts
- 1 Tbsp olive oil
- Kosher salt & black pepper
Gravy:
- 3 Tbsp butter
- 1 Tbsp chicken base (Better Than Bouillon brand recommended)
- 4 Tbsp all-purpose flour
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 cups chicken stock
- 1/2 cup water
- 1/4 cup heavy cream (optional)
Side:
- Instant Pot Mashed Potatoes
- Prepare Chicken: Season chicken breasts with salt and pepper. Cook in a skillet until internal temperature reaches 165℉. Set aside.
- Make Gravy: In the same skillet, melt butter and chicken base. Add flour mixture to create a roux. Pour in chicken stock, water, and optional cream. Simmer until thickened.
- Combine: Shred chicken, return to the gravy, and simmer together.
- Adjust Seasoning: Taste and adjust seasoning if needed.
- Serve: Serve over mashed potatoes or rice, with optional sides like peas, garlic bread, or salad.
Notes
- Do not add extra salt while making the gravy as there is enough salt from the seasoned chicken and stock.
- Taste the gravy before serving to adjust seasoning if necessary.
