Chicken Thighs:

  • 8 skinless, boneless chicken thighs

Coating:

  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Sauce:

  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp finely chopped fresh parsley
  • 1/2 tsp chilli flakes

Serving:

  • Boiled rice

Instructions

  1. Coat the Chicken: In a bowl, coat the chicken thighs with cornflour, salt, and pepper until fully coated.
  2. Cook Chicken: Heat oil in a large skillet over high heat. Add chicken thighs and cook until golden brown on both sides.
  3. Prepare Garlic Butter: Add butter to the pan, then garlic. Stir together and reduce heat.
  4. Make the Sauce: Combine honey, stock, rice vinegar, and soy sauce. Pour into the pan.
  5. Simmer: Bring sauce to a boil, then simmer until thickened and chicken is cooked through.
  6. Finish and Serve: Add parsley, chilli flakes, and serve over boiled rice.
