Chicken Thighs:
- 8 skinless, boneless chicken thighs
Coating:
- 2 tbsp cornflour (cornstarch)
- 1/2 tsp salt
- 1/2 tsp pepper
Sauce:
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves minced garlic
- 110 g (1/3 cup) honey
- 80 ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp finely chopped fresh parsley
- 1/2 tsp chilli flakes
Serving:
- Coat the Chicken: In a bowl, coat the chicken thighs with cornflour, salt, and pepper until fully coated.
- Cook Chicken: Heat oil in a large skillet over high heat. Add chicken thighs and cook until golden brown on both sides.
- Prepare Garlic Butter: Add butter to the pan, then garlic. Stir together and reduce heat.
- Make the Sauce: Combine honey, stock, rice vinegar, and soy sauce. Pour into the pan.
- Simmer: Bring sauce to a boil, then simmer until thickened and chicken is cooked through.
- Finish and Serve: Add parsley, chilli flakes, and serve over boiled rice.
