Cherry Tomatoes Marinade:
- 900 g (32oz) cherry tomatoes, halved
- ½ cup (118ml) extra virgin olive oil
- 6 tbsp (50g) fresh garlic, minced
- 18 large basil leaves (julienned + extra for garnish)
- ½ tsp red pepper flakes (crushed)
- 1 tsp salt
- ½ tsp freshly ground black pepper
Pasta Salad:
- 454 g (1lb) dried angel hair pasta
- All of the prepared marinated tomatoes
- 1½ cups (150g) grated Parmesan cheese + extra for serving
- For the Cherry Tomatoes Marinade
Combine cherry tomatoes, olive oil, minced garlic, basil leaves, red pepper flakes, salt, and black pepper in a large bowl. Cover and let sit for at least a few minutes.
- For the Pasta Salad
Cook pasta al dente. Drain and mix with the cherry tomatoes marinade. Toss in Parmesan cheese. Garnish with basil leaves.
