Pastry Dough
- 2.5 cups all-purpose flour
- 1 tsp salt
- 1 cup cold unsalted butter, cubed
- 6–8 tbsp cold water
Filling
- 1 lb ground beef
- 1 cup diced potatoes, peeled and cut small
- ½ cup diced carrots
- ½ cup chopped onion
- 1 tsp salt or to taste
- ½ tsp black pepper
- ½ tsp thyme or mixed herbs (optional)
Finish
- 1 egg, beaten (for egg wash)
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the pasties.
- Make Pastry Dough: In a large bowl, mix together the all-purpose flour and salt. Using a pastry cutter or your fingers, cut in the cold cubed unsalted butter until the mixture resembles coarse crumbs.
- Form Dough: Gradually add cold water, one tablespoon at a time, and mix gently until the dough starts to come together. Shape the dough into a ball, wrap it tightly in plastic wrap, and chill in the refrigerator for 15 to 20 minutes to firm up.
- Prepare Filling: In a separate bowl, combine the ground beef, diced potatoes, carrots, chopped onion, salt, black pepper, and optional thyme or mixed herbs. Mix the ingredients well to evenly distribute the flavors.
- Roll Out Dough: Divide the chilled dough into six equal portions. Roll each portion on a lightly floured surface into a circle approximately 6 inches in diameter.
- Fill and Seal: Spoon about ½ cup of the meat and vegetable filling onto one half of each dough circle. Fold the other half over the filling, and press the edges together firmly to seal. Crimp the edges to ensure they are tightly closed to prevent leaking during baking.
- Apply Egg Wash: Brush the top of each pasty with the beaten egg to create a glossy, golden-brown crust when baked.
- Bake: Place the pasties on the prepared baking sheet and bake in the preheated oven for 35 to 40 minutes, or until the pastry is golden brown and the filling is cooked through.
- Serve: Allow to cool slightly after baking, then serve the warm pasties with brown gravy or HP sauce for a traditional accompaniment.
Notes
- Use cold butter and cold water for a flakier pastry crust.
- Ensure the edges are well sealed to prevent filling from leaking during baking.
- Feel free to add herbs such as rosemary or parsley to the filling for additional flavor.
- These pasties can be made ahead and frozen before baking; bake directly from frozen adding a few extra minutes to the baking time.
- Serve with traditional condiments like brown gravy or HP sauce for an authentic Irish experience.
