Ingredients

Scale

Chicken and Marinade

  • 68 pieces chicken (bone-in or boneless, skin-on or off as preferred)
  • 1/2 cup Italian dressing
  • 1 teaspoon salt (or more to taste)
  • 1 teaspoon adobo seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons paprika

Vegetables

  • 1 small red bell pepper, sliced
  • 1 small green bell pepper, sliced
  • 1/2 small yellow onion, sliced

Optional

  • 3 tablespoons unsalted butter, sliced

Instructions

  1. Marinate the Chicken: Place the chicken pieces in a large bowl and pat them dry. Add the sliced red and green bell peppers and yellow onion. Pour the Italian dressing over the chicken and vegetables, then sprinkle with paprika, garlic powder, onion powder, Italian seasoning, adobo, and salt. Mix everything thoroughly to ensure the chicken is well coated. Cover and let it marinate for at least 1 hour or up to overnight in the refrigerator to allow the flavors to deepen.
  2. Prepare for Baking: Preheat your oven to 375°F (190°C). Transfer the marinated chicken and vegetables into a 13×9 inch baking dish, spreading them out evenly. If desired, place the sliced unsalted butter on top of the chicken pieces to add richness and help keep the meat moist as it bakes.
  3. Bake the Chicken: Place the baking dish uncovered on the middle rack of the oven. Bake for about 1 hour, or until the chicken is fully cooked through and the internal temperature reaches 165°F (74°C). The chicken should have a golden brown top and the vegetables will be tender and slightly caramelized.
  4. Serve: Remove from the oven and let the chicken rest for a few minutes. Serve hot, pairing with your favorite side dishes such as rice, roasted potatoes, or a fresh salad for a complete meal.

Notes

  • Marinating overnight intensifies the flavors but even a 1-hour marinade gives delicious results.
  • Bone-in chicken pieces will take slightly longer to cook than boneless.
  • Use a meat thermometer to ensure the chicken is cooked thoroughly and safely.
  • Butter is optional but recommended for a richer flavor and moist texture.
  • You can customize the vegetables by adding mushrooms, zucchini, or cherry tomatoes if desired.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to preserve moisture.
