For the Dressing

  • 1 cup mayonnaise
  • 1/4 cup sugar-free ketchup
  • 4 tsp prepared horseradish
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • Pinch of black pepper

Instructions

  1. Heat the Butter: In a medium skillet over medium heat, melt the butter until it is foamy. This will create a flavorful base to sauté the corned beef.
  2. Sauté the Corned Beef: Add the corned beef strips to the skillet, cover them, and let cook for about 5 minutes, stirring occasionally, until the beef is heated through and slightly browned.
  3. Add and Wilt Coleslaw Mix: Layer the coleslaw mix over the warmed corned beef without stirring, cover the pan again, and cook for another 5 minutes. The coleslaw will soften and slightly wilt, melding with the beef flavors.
  4. Combine and Melt Cheese: Stir the beef and coleslaw together in the skillet. Then, top with the Swiss cheese. Cover the pan to allow the cheese to melt thoroughly, or alternatively, place the skillet under the broiler for a few minutes until the cheese is bubbly and melted.
  5. Prepare and Add Dressing: In a small bowl, whisk together the mayonnaise, sugar-free ketchup, horseradish, hot sauce, Worcestershire sauce, salt, and black pepper until smooth. Drizzle this dressing generously over the cheesy beef and coleslaw mixture in the bowl.
