Crust

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ cup nuts (pecans or walnuts, chopped finely)
  • ½ cup unsalted butter, softened

First Layer

  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 8 oz container whipped topping, thawed

Second Layer

  • 2 3.4oz instant lemon pudding boxes
  • 3 cups cold milk

Third Layer

  • 8 oz container whipped topping, thawed
  • Zest of lemon
  • Lemon slices (optional)

Instructions

  1. Crust: Preheat oven to 350 degrees F. Spray a 13×9 baking dish with cooking spray. Combine crust ingredients in a bowl, press into the baking dish, and bake for 15-18 minutes until golden brown. Cool completely.
  2. First Layer: Cream together cream cheese and sugar until smooth. Stir in lemon zest, juice, and whipped topping. Spread over crust and chill in the refrigerator for at least 30 minutes.
  3. Second Layer: Mix pudding mix and milk until smooth. Spread over the cream cheese layer and chill for at least 15 minutes until set.
  4. Third Layer: Spread remaining whipped topping over the pudding layer. Optionally, garnish with nuts, lemon zest, or slices. Chill for at least 1 hour before serving. Store leftovers in the refrigerator.
