Instructions

  2. Blend the Dragon Fruit: Peel and roughly chop half of the pink dragon fruit. Blend the pieces until you obtain a smooth puree, which will add a refreshing and vibrant flavor to the pudding.
  3. Combine Dragon Fruit with Chia Pudding: Stir the smooth dragon fruit puree into the prepared chia pudding, ensuring the flavors are evenly mixed throughout the pudding base.
  4. Blend the Mango: Peel and roughly dice the Alphonso mango. Blend it until smooth to create a sweet, tropical mango puree that complements the dragon fruit chia mixture.
  5. Assemble the Parfait: In serving cups or jars, layer the dragon fruit chia pudding, mango puree, and vanilla coconut yogurt if using. Finish by topping with chopped mango pieces to add texture and an additional burst of fruity flavor.
