Salmon:

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Sauce:

  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Prepare Seasonings: Combine dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper in a small bowl.
  2. Season Salmon: Rub half of the seasoning mix onto the salmon fillets.
  3. Sear Salmon: Sear the seasoned salmon in olive oil in a skillet until cooked to your liking. Set aside.
  4. Sauté Garlic and Tomatoes: In the same skillet, sauté garlic and sun-dried tomatoes.
  5. Deglaze Pan: Add chicken stock to deglaze the pan, then add cream, parmesan, and remaining seasonings.
  6. Simmer Sauce: Simmer the sauce until thickened.
  7. Finish Dish: Return salmon to the skillet, spoon sauce over, and cook briefly. Garnish with fresh basil before serving.
