Chocolate Coating

  • 1 cup (170 g) couverture white chocolate chips
  • 1/4 teaspoon salt
  • 4 1/2 teaspoon (10 g) matcha powder

Cereal

  • 4 cups Chex rice cereal

Powdered Sugar Coating

  • 1 cup (210 g) powdered sugar
  • 2 teaspoon matcha powder

Instructions

  1. Melt the white chocolate: Using a double boiler method, in a heatproof bowl add the salt and white chocolate. Place over a pot filled with gently simmering water, ensuring the bowl doesn’t touch the water. Stir continually over low heat until the chocolate has fully melted and is smooth.
  2. Sift in the matcha powder: Using a fine-mesh sieve, sift in the matcha powder into the melted white chocolate to remove any clumps. Gently fold the mixture with a spatula until the matcha is fully incorporated and the chocolate is uniformly green and smooth.
  3. Mix the melted matcha chocolate with the cereal: Place the Chex rice cereal into a large mixing bowl. Pour the melted matcha white chocolate over the cereal in 3 separate batches, gently folding with a rubber spatula after each addition to ensure even coating without breaking the cereal. Set the coated cereal aside to cool to room temperature.
  4. Whisk the powdered sugar and matcha powder: In a separate bowl, whisk together the powdered sugar and matcha powder until evenly combined and free of lumps.
  5. Toss the coated cereal in the powdered sugar mix: Once the matcha-coated cereal has cooled, transfer it to a large gallon-sized ziplock bag along with the powdered sugar-matcha mixture. Seal the bag securely and shake vigorously until every piece of cereal is thoroughly coated. Add extra powdered sugar blend if necessary for full coverage.
  6. Chill and serve: Spread the coated puppy chow onto a parchment-lined baking sheet in an even layer. Refrigerate uncovered for 15-30 minutes to allow the coating to set and dry slightly. Store leftovers in an airtight container in the refrigerator for freshness.
