For the Picadillo:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 large russet potato, peeled and diced into ½ inch cubes
- 1–2 jalapeños, seeded and finely diced (or green bell pepper if you prefer less heat)
- 1 teaspoon ground cumin
- 1 teaspoon Mexican oregano
- ½ teaspoon ground coriander
- 1 cup tomato sauce
- 1 ½ cups beef broth
- Salt and pepper, to taste
For Garnish:
- Fresh cilantro, chopped (optional)
- Cook the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until no longer pink. Drain excess fat if needed.
- Add Vegetables: Mix in onion, garlic, potatoes, and jalapeños (or bell pepper). Cook until onions are soft, around 3 minutes.
- Season and Simmer: Pour in tomato sauce and beef broth. Add cumin, oregano, and coriander. Stir well and simmer covered for 10 minutes.
- Finish Cooking: Uncover, stir, and cook for an additional 10 minutes or until potatoes are tender and liquid reduces. Season with salt and pepper.
- Serve: Enjoy warm with white rice. Garnish with fresh cilantro, if desired.
