Ingredients

Scale

Pie Dough

  • 1 box refrigerated pie dough (14.1 oz)

Beef Filling

  • 3/4 lb ground beef
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 3/4 teaspoon chili powder
  • 3/4 teaspoon paprika
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon cumin
  • 1/2 cup black beans
  • 1/4 cup shredded cheddar cheese

Egg Wash

  • 1 egg, lightly beaten
  • 1/2 teaspoon water

Instructions

  1. Cook the Beef Mixture: Heat olive oil in a large skillet over medium heat. Add the ground beef and stir to crumble. Season with salt, chili powder, paprika, onion powder, garlic powder, and cumin, stirring well to combine. Cook for 8-10 minutes until the beef is no longer pink and the mixture thickens. Stir in black beans, then remove from heat and let it cool.
  2. Prepare Pie Dough Circles: Preheat your oven to 425°F (220°C). Sprinkle flour over a work surface and roll out one sheet of the refrigerated pie dough. Using a 3-inch biscuit cutter, cut out circles. Re-roll scraps as needed and cut additional circles from the second dough sheet.
  3. Assemble Hand Pies: Arrange half of the dough circles on a baking sheet lined with cooking spray. Spoon a tablespoon of the beef mixture onto each circle, followed by roughly half a teaspoon of shredded cheddar cheese. Top with remaining dough circles and seal the edges by pinching with the tines of a fork.
  4. Apply Egg Wash: In a small bowl, combine the beaten egg and water. Brush this egg wash evenly over the tops of each hand pie to ensure a golden-brown finish after baking.
  5. Bake the Hand Pies: Place the baking sheet in the preheated oven and bake for 13-15 minutes, or until the pies turn golden brown. Remove from oven and allow them to cool slightly before serving.
  6. Storage: Store any leftover hand pies in an airtight container or a zip-top bag in the refrigerator. They will stay fresh for up to 3 days. Reheat thoroughly before serving.

Notes

  • Use your favorite taco toppings such as salsa, sour cream, or guacamole when serving for added flavor.
  • Black beans can be substituted with refried beans or omitted entirely based on preference.
  • Ensure the edges are sealed well to prevent filling from leaking during baking.
  • For a spicier twist, add a pinch of cayenne pepper or chopped jalapeños to the beef mixture.
  • These hand pies can also be frozen before baking; bake straight from frozen, adding extra baking time as needed.
