The image shows several square dessert bars arranged on a white marbled surface. Each bar has three visible layers: the bottom layer is a dark brown, dense and moist cake or brownie base. The middle layer is a pale green cream or frosting, smooth and thick, covering the entire top of the base evenly. The top layer consists of dark chocolate drizzle in thin, irregular lines crossing over the green cream. The bars are spaced out unevenly, showing their clean edges and the texture of each layer clearly. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil, and egg called for on brownie mix box
  • 2/3 cup mint-flavored chocolate chips
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1/4 teaspoon mint extract
  • Betty Crocker™ green gel food color, if desired
  • 1/3 cup mint-flavored chocolate chips
  • 4 teaspoons butter
  • 4 teaspoons corn syrup
  • 1 teaspoon hot water

Instructions

  1. Step 1: Preheat the oven to 350°F (325°F for dark or nonstick pans). Grease the bottom of a 9-inch square pan with shortening or cooking spray. Prepare the brownie batter according to the box instructions and stir in 2/3 cup mint-flavored chocolate chips. Spread the batter evenly in the pan.
  2. Step 2: Bake for 28 to 31 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Let the brownies cool completely on a cooling rack, about 1 1/2 hours.
  3. Step 3: In a small bowl, stir together 1 cup vanilla frosting, 1/4 teaspoon mint extract, and green gel food color if using, until well blended. Spread the frosting evenly over the cooled brownies.
  4. Step 4: In a 1-quart saucepan, heat 1/3 cup mint-flavored chocolate chips, 4 teaspoons butter, and 4 teaspoons corn syrup over low heat, stirring occasionally until melted. Stir in hot water 1/4 teaspoon at a time until the glaze is thin enough to drizzle. Drizzle the glaze over the frosted brownies.
  5. Step 5: Refrigerate the brownies for about 30 minutes or until the glaze is firm. Cut into 4 rows by 4 rows and serve.

Tips & Variations

  • Use dark chocolate chips instead of mint-flavored ones for a less intense mint flavor.
  • Add a few drops of peppermint extract to the brownie batter for an extra minty kick.
  • Swap the vanilla frosting for chocolate frosting for a richer topping.
  • For a festive touch, sprinkle crushed candy canes over the glaze before it sets.

Storage

Store these brownies in an airtight container in the refrigerator for up to 5 days to keep the frosting and glaze firm. Bring to room temperature before serving for the best texture. You can also freeze them for up to 2 months; thaw overnight in the fridge before enjoying.

How to Serve

The image shows multiple square pieces of a dessert laid out on a white marbled surface. Each piece has three clear layers: the bottom layer is a dark brown, moist cake or brownie; the middle layer is light and creamy, possibly a white or beige filling; the top layer is a smooth, pale green frosting spread evenly with a slightly glossy finish. On top of this green frosting, there are random, thin lines of dark brown chocolate drizzle creating a casual, artistic pattern. The edges of the pieces are clean and sharp, showing the contrast between each layer clearly. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use a different pan size?

A 9-inch square pan is ideal to ensure proper baking time and thickness. If using a different size, adjust the baking time accordingly and check doneness with a toothpick.

What if I don’t have mint-flavored chocolate chips?

You can substitute regular chocolate chips and increase the mint extract slightly to boost the mint flavor. Alternatively, chopped Andes mints work well in this recipe.

  • Betty Crocker™ green gel food color, if desired

Glaze

  • 1/3 cup mint-flavored chocolate chips
  • 4 teaspoons butter
  • 4 teaspoons corn syrup
  • 1 teaspoon hot water

Instructions

  1. Prepare Brownie Batter: Preheat the oven to 350°F (325°F for dark or nonstick pans). Grease the bottom of a 9-inch square pan with shortening or cooking spray. Prepare the brownie batter according to the instructions on the box, mixing in 2/3 cup of mint-flavored chocolate chips. Pour and spread the batter evenly into the prepared pan.
  2. Bake Brownies: Bake the brownies for 28 to 31 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out almost clean. Remove from the oven and cool completely on a cooling rack, approximately 1 1/2 hours.
  3. Make and Spread Frosting: In a small bowl, combine the vanilla frosting with 1/4 teaspoon mint extract and, if desired, a few drops of green gel food coloring. Stir thoroughly with a spoon until well blended. Spread the frosting evenly over the cooled brownies.
  4. Prepare Glaze: In a 1-quart saucepan, gently heat the glaze ingredients — mint-flavored chocolate chips, butter, and corn syrup — over low heat, stirring occasionally until melted completely. Gradually stir in up to 1 teaspoon of hot water, a little at a time, until the glaze reaches a thin, drizzle-able consistency.
  5. Drizzle Glaze and Chill: Drizzle the prepared glaze over the frosted brownies. Refrigerate the brownies for about 30 minutes or until the glaze is firm.
  6. Serve: Once set, cut the brownies into 16 equal pieces by slicing into 4 rows by 4 rows. Enjoy your refreshingly minty chocolate treat!

Notes

  • Use dark or nonstick pans at 325°F to prevent overbaking or burning.
  • Adding green gel food coloring to the frosting enhances visual appeal but is optional.
  • Ensure glaze is thin enough to drizzle by gradually adding hot water.
  • Allow brownies to cool completely before frosting to avoid melting the frosting.
  • These brownies can be stored in an airtight container in the refrigerator for up to 5 days.
