Chicken Marinade

  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas
  • extra lime wedges, for serving

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the chipotle paste, honey, tomato puree, salt, crushed garlic, and lime juice until well combined. Add the chopped chicken pieces and toss until fully coated. Set aside to marinate while you preheat the oven.
  2. Roast the chicken and pineapple: Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit). Spread the marinated chicken pieces evenly across a baking tray, then scatter the pineapple chunks over the top. Roast in the oven for 30 minutes, or until the chicken is cooked through and slightly caramelized.
  3. Prepare accompaniments: While the chicken and pineapple are roasting, peel and finely chop the shallot. Cube the ripe avocado. If using corn tortillas, lightly char them in a very hot frying pan or directly over a hot plate to enhance flavor and texture; flour tortillas can be warmed separately.
  4. Assemble the tacos: Remove the chicken and pineapple from the oven and squeeze over additional lime juice. Toss everything gently on the tray with the chopped shallot. Serve the mixture sprinkled with fresh coriander alongside the avocado cubes and warmed tortillas. Provide lime wedges for extra zing.
