For the Chicken:

  • pounds boneless skinless chicken breasts ((6 breasts, 4 ounces each) or cutlets *See Notes)
  • 2 tablespoons avocado oil (olive oil, or melted butter)
  • 1/4 cup lemon juice ((approx. 1 large or two small lemons))

For the Coating:

  • 1/2 cup Italian seasoned panko ((Japanese bread crumbs) or gluten free panko)
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon fine ground sea salt
  • 1/4 teaspoon ground black pepper
  • 1 lemon (cut into slices)
  • 1/4 cup chopped flat leaf parsley

Instructions

  1. Preheat the oven: Preheat oven to 375ºF. Prepare a 9×13-inch baking dish by lining with foil and greasing it.
  2. Pound the chicken: Place chicken breasts between sheets of wax paper and pound them to an even thickness. Brush with oil and lemon juice.
  3. Coat the chicken: Combine panko and seasonings. Coat the chicken with the mixture and place in the baking dish.
  4. Bake: Bake for 12 minutes, flip the chicken, and continue baking until crispy and golden brown.
  5. Rest and serve: Let the chicken rest for 5 minutes, then garnish with lemon slices and parsley before serving.
  1. For Air Fryer: Preheat air fryer to 350ºF. Air fry the coated chicken for 18-20 minutes until golden and crisp. Let it rest, then garnish before serving.

Notes

  • You can use chicken cutlets for quicker cooking.
