Hot Peppers:

  • 1 cup Hot Peppers (e.g., 3 jalapeno, 1 poblano, and 3 Anaheim), finely chopped

Apple Cider Vinegar:

  • 1 cup Apple Cider Vinegar

Powdered Pectin:

  • 1 package Powdered Pectin

White Sugar:

  • 5 cups White Sugar

Instructions

  1. Wash and Peel Peaches: Wash the peaches, blanch or place in ice water to peel.
  2. Chop Peaches and Peppers: Finely chop the peaches and peppers in a food processor.
  3. Cook Ingredients: Combine chopped ingredients in a large pot. Add vinegar and pectin, heat to a boil.
  4. Add Sugar: Stir in sugar, bring to a boil, and boil for 1 minute.
  5. Ladle into Jars: Remove from heat, skim foam, ladle jelly into jars leaving a 1/4 inch headspace.
  6. Process Jars: Wipe rims, remove air bubbles, seal jars, and process in boiling water bath for 10 minutes.
  7. Cool and Seal: Remove jars, let cool on towel for 24 hours without disturbance.
