Peanut Butter Snowballs are a no-bake, creamy, and sweet treat made from peanut butter, powdered sugar, graham cracker crumbs, and coated in smooth white chocolate. These bite-sized snowballs are perfect for holiday gatherings or as a delightful snack, combining rich peanut butter flavor with a crunchy, melt-in-your-mouth texture.

Ingredients

Scale

Peanut Butter Mixture

  • 1 1/2 cups creamy peanut butter
  • 2 cups powdered sugar
  • 1/3 cup unsalted butter, melted
  • 3/4 cup graham cracker crumbs
  • 1 tsp vanilla extract

Coating

  • 1 cup white chocolate melting wafers
  • Sprinkles (optional)

Instructions

  1. Prepare Peanut Butter Mixture: Melt the unsalted butter and combine it with creamy peanut butter and vanilla extract in a large mixing bowl. Blend these ingredients well to create a smooth base.
  2. Add Dry Ingredients: Gradually add powdered sugar and graham cracker crumbs to the peanut butter mixture. Beat all ingredients together until thoroughly combined and a dough-like texture forms.
  3. Chill the Dough: Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up, making it easier to shape.
  4. Shape the Snowballs: After chilling, remove the dough from the fridge. Using a small cookie scoop or tablespoon, portion out the dough and roll into uniform balls with your hands until all the dough is shaped.
  5. Freeze the Balls: Place the formed balls on a parchment-lined baking sheet. Cover with plastic wrap and freeze for at least one hour or ideally overnight to solidify the balls for coating.
  6. Prepare Coating Station: Set a cooling rack on top of a cookie sheet or line a cookie sheet with wax or parchment paper. This setup will catch drips from the chocolate coating.
  7. Melt White Chocolate: Melt the white chocolate melting wafers in a microwave-safe bowl in 30-second increments, stirring in between, or using a double boiler on the stove. Continue until the chocolate is smooth and fully melted.
  8. Dip the Snowballs: Using a fork, carefully dip each peanut butter ball into the melted white chocolate, ensuring it is fully coated. Work quickly to prevent the balls from softening too much.
  9. Add Sprinkles and Set: Place the chocolate-coated balls onto the prepared parchment paper immediately after dipping. If desired, sprinkle with decorative sprinkles before the chocolate sets. Let the snowballs harden at room temperature or in the fridge before serving.

Notes

  • Use a small cookie scoop for even-sized snowballs to ensure uniform coating and freezing.
  • Chilling and freezing the peanut butter mixture makes it easier to handle and helps the coating set nicely.
  • White chocolate melting wafers melt more smoothly and are ideal for dipping compared to regular white chocolate bars.
  • Store peanut butter snowballs in an airtight container in the refrigerator for up to one week.
  • For a festive touch, use colored sprinkles or add crushed nuts for extra texture.
