Dry Ingredients:

  • 4 cups Spelt Flour
  • 2 Teaspoon Salt

Additional Ingredients:

  • 1¼ cups Mixed Seeds (*see Notes)
  • 1 cube Fresh Compressed Yeast (1½ ounce, *see Notes)
  • 1 Tablespoon Honey
  • ¼ cup Vinegar (*see Notes)
  • 2 cups Water
  • Butter
  • Oats (quick cooking)

Instructions

  1. In a large bowl, combine spelt flour, salt, and mixed seeds. Crumble in the fresh yeast. Mix well.
  2. Create a well in the center and add honey, vinegar, and water. Mix and knead into a dough.
  3. Knead the dough until smooth, either by hand or using a kitchen machine.
  4. Preheat the oven to 390°F/200°C.
  5. Grease a baking pan and sprinkle oats inside.
  6. Transfer the dough to the pan and smooth the top.
  7. Bake at 390°F/200°C for 20 minutes.
  8. Remove from the oven and make a lengthwise cut on top.
  9. Return to the oven and bake for an additional 40 minutes.

  • *Notes: Mixed seeds can include a combination of sunflower, pumpkin, flax, or chia seeds. Adjust the seed mix to your preference.
