  • 1/3 cup peanut butter

  • 1 tbsp coconut flour

Instructions

  1. Melt Chocolate: Add the dark chocolate and coconut oil into a medium bowl and microwave in 30-second increments, stirring well after each, until the chocolate is smooth and creamy.
  2. Mix Chocolate Layer: Stir in 2 tablespoons of peanut butter and 3 tablespoons of quinoa crisps into the melted chocolate mixture and set aside.
  3. Prepare Peanut Butter Filling: In a small bowl, combine 1/3 cup peanut butter with 1 tablespoon maple syrup, then gently fold in 1 tablespoon coconut flour until the mixture thickens slightly.
  4. Assemble Cups – First Layer: Spoon about 1/2 tablespoon of the chocolate mixture into silicone cupcake liners, spreading to form an even base.
  5. Add Peanut Butter Center: Roll 1 teaspoon of the peanut butter filling into a small ball and flatten it slightly. Place it carefully into the center of each cupcake liner on top of the chocolate layer without touching the sides.
  6. Top with Chocolate: Cover the peanut butter filling with the remaining chocolate mixture to fully encase it.
