These Raspberry Brownie Date Bites are a delightful treat that combines the sweet chewiness of dates, the tartness of raspberries, and the richness of chocolate into one irresistible bite-sized snack.

Ingredients

Raspberry Jam:

  • 12 ounces frozen raspberries
  • 2 tbsp chia seeds
  • 1 cup water
  • 1 tbsp arrowroot powder

Brownie Layer:

  • 10 large medjool dates
  • 2/3 cup cocoa powder
  • 1/3 cup maple syrup
  • 1/3 cup runny nut butter
  • 1/2 cup oat flour
  • 1/3 cup + 2 tbsp almond milk
  • 1 tsp vanilla extract

Chocolate Coating:

  • 1 cup chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Raspberry Jam: Cook the jam ingredients on medium heat for 10-12 minutes or until jam is thick, stirring periodically.
  2. Brownie Layer: Mix the brownie layer ingredients, roll into balls or mold into silicone ice cube molds, freeze for 30 minutes, then place on top of flattened medjool dates.
  3. Assembly: Spoon raspberry jam on top of the brownie layer.
  4. Setting: Freeze for 1 hour to set.
  5. Chocolate Coating: Dip in melted chocolate, refrigerate for 20 minutes until hardened.
  6. Storage: Store in an airtight container in the fridge.
