Rattlesnake Pasta is a spicy and creamy pasta dish featuring Cajun-seasoned chicken, bell peppers, onions, and a rich Parmesan cream sauce. It’s a flavorful and satisfying meal that’s perfect for spice lovers.

Penne Pasta:

  • 16 oz. penne pasta

Chicken:

  • 16 oz. boneless, skinless chicken breast, cut into ½” cubes
  • 1½ tsp Cajun seasoning
  • 1 Tbsp unsalted butter

Vegetables:

  • 1 Tbsp olive oil
  • 1 red bell pepper, sliced into ¼” strips
  • 1 green bell pepper, sliced into ¼” strips
  • ½ large red onion, sliced into ¼” strips
  • 1½ tsp minced garlic

Sauce:

  • 4 Tbsp unsalted butter (divided)
  • ½ cup all-purpose flour
  • 2 cups low-sodium chicken stock
  • ¾ cup whole or 2% milk
  • 1 head roasted garlic, coarsely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup grated Parmesan cheese
  • ¾ cup heavy cream

Garnish:

  • Green onions, chopped

Instructions

  1. For the Pasta – Cook pasta for 2 minutes less than al dente on package instructions; drain and set aside.
  2. For the Chicken – Coat cubed chicken with Cajun seasoning. Cook in butter until done; set aside.
  3. For the Sauce – Sauté vegetables in butter and oil. Make a roux, then add stock, milk, garlic, salt, and pepper. Simmer, then add cheese and cream. Combine with chicken and pasta.
  4. Garnish with green onions before serving.

Notes

  • Adjust Cajun seasoning to control the spiciness of the dish.
  • Roasting garlic beforehand adds a deep, mellow flavor to the sauce.
