Ingredients

Potatoes:

1-2 large baking potatoes, washed and cubed
2 tablespoons olive oil, divided
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper

Additional Ingredients:

7 oz (200 g) block of feta cheese
1 head of garlic, top sliced off
1 lemon, quartered
1 tablespoon honey
1/4 cup (20 g) fresh basil, chopped

Instructions

  1. Preheat and Prepare: Preheat oven to 390°F (200°C). Wash and cube potatoes, place in a baking dish.
  2. Season the Potatoes: Drizzle 1 tablespoon of olive oil over potatoes. Sprinkle with thyme, oregano, salt, and pepper. Toss to coat.
  3. Add the Feta and Garlic: Place feta in the center of the dish. Press one side into seasonings on potatoes. Add garlic and lemon wedges. Drizzle remaining olive oil.
  4. Bake to Perfection: Roast for 45-55 minutes until potatoes are crispy. Remove garlic if browning too much.
  5. Mash and Mix: Squeeze roasted garlic cloves out of skins. Mash into a paste. Add garlic paste, lemon juice, and basil to the dish. Mix gently.
  6. Finishing Touch: Drizzle honey over the top and sprinkle with fresh basil.
  7. Serve and Enjoy: Serve hot and enjoy!
