This Shrimp and Zucchini Skillet recipe is a quick and flavorful dish that combines juicy shrimp with tender zucchini in a creamy Parmesan sauce. Perfect for a weeknight dinner or entertaining guests!

For the Shrimp:

  • 1 ½ lbs. small peeled and deveined shrimp
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 1 tsp. Cajun seasoning

For the Skillet:

  • 1 ½ lbs. zucchini, cubed
  • ½ cup white wine
  • 8 oz. roasted bell peppers, chopped
  • 3 garlic cloves, minced
  • ½ cup heavy cream or Half & Half
  • ½ cup grated Parmesan
  • 2 tbsp. chopped parsley
  • Salt and pepper to taste

Instructions

  1. Cook the Shrimp: Heat a large skillet over medium-high heat. Add olive oil, 1 tablespoon of butter, shrimp, and Cajun seasoning. Cook for 4-5 minutes. Remove shrimp and set aside.
  2. Prepare the Skillet: In the same skillet, add remaining butter, zucchini, and white wine. Cook until wine evaporates, about 5-6 minutes.
  3. Combine Ingredients: Add roasted peppers and garlic. Cook for 3-4 minutes. Season with salt and pepper.
  4. Finish the Dish: Return shrimp to the skillet. Add cream, Parmesan, and parsley. Stir and cook for another 3-4 minutes.
