  • ½ tsp baking soda
  • ¼ tsp white pepper

Vegetables and Aromatics

  • 250 g (8.8 oz) mushrooms, sliced
  • ½ onion, sliced
  • 34 slices ginger
  • 3 cloves garlic, minced
  • 1 tsp dried crushed chillies
  • 23 spring onions (green onion/scallion), sliced

Stir Fry Sauce

  • 3 tbsp oyster sauce
  • 1 tbsp regular soy sauce
  • 1 tsp dark soy sauce
  • 2 tsp sugar
  • 1 tbsp water
  • 1 tbsp Chinese cooking rice wine
  • ½ tsp cornstarch
  • ¼ tsp white pepper

Cooking Oils

  • 3 tbsp cooking oil (for frying)
  • 1 tsp sesame oil (for finishing)

Instructions

  1. Prepare the Beef: Cut the beef steak into thin strips against the grain to ensure tenderness. In a bowl, combine grated ginger, soy sauce, sugar, cornstarch, cooking oil, baking soda, and white pepper to make the marinade. Add the beef strips and mix well to coat evenly. Let it marinate for at least 10-15 minutes.
  2. Mix the Stir Fry Sauce: In a separate small bowl, whisk together oyster sauce, regular soy sauce, dark soy sauce, sugar, water, Chinese cooking rice wine, cornstarch, and white pepper until fully combined. Set aside.
  3. Sauté Vegetables: Heat a wok or large skillet over medium-high heat. Add 1-2 tablespoons of cooking oil, then sauté the sliced onions and mushrooms for 1-2 minutes until slightly softened. Remove from wok and set aside.
  4. Cook the Beef: Add remaining oil to the wok and increase heat to high. Add the marinated beef strips in a single layer and sear them for about 1-2 minutes without stirring to develop a good sear. Flip the beef to cook the other side for 1 minute.
  5. Add Aromatics: Add minced garlic, sliced ginger, and dried crushed chillies to the wok. Stir for 1-2 minutes until fragrant and the beef is mostly cooked through.
  6. Combine and Finish: Pour in the prepared stir fry sauce, stirring constantly to coat the beef. Return the cooked mushrooms and onions to the wok. Continue stir-frying until the sauce is glossy and thickened, and all ingredients are well combined and heated through.
  7. Garnish and Serve: Stir in sliced spring onions and drizzle sesame oil over the stir fry. Give it a final toss and serve immediately with steamed rice or noodles.
