Instructions

  1. Prepare the Oven and Cabbage: Preheat your oven to 425°F and place a rack in the center. Cut the cabbage into eight wedges by halving it lengthwise twice and then slicing each quarter in half. Line a large rimmed baking sheet with parchment paper for easy cleanup and arrange the cabbage wedges in a single layer.
  2. Oil the Cabbage: Brush the cabbage wedges with extra-virgin olive oil, making sure to coat all sides. Then flip the wedges over and repeat the oiling on the other side.
  3. Make the Honey-Garlic Butter Mixture: Melt the unsalted butter in a small bowl, then whisk in honey, minced garlic, kosher salt, and ground black pepper until combined.
  4. Season the Cabbage: Brush the honey-garlic butter mixture liberally over the top of each cabbage wedge, ensuring good coverage.
  5. Roast the Cabbage: Place the cabbage in the preheated oven and roast for 15 minutes. Using a spatula, carefully flip each wedge over. Sprinkle the freshly grated Parmesan cheese on top of the wedges.
  6. Continue Roasting: Roast for an additional 15 to 20 minutes until the cabbage is tender and the edges are dark brown and caramelized. Some edge pieces might be almost charred; these are considered the tastiest parts.
