Ingredients

Scale

Beef and Vegetables

  • 1 pound ground beef (sirloin, 93/7 recommended)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 23 large scallions, roughly chopped
  • 3 cloves garlic, minced

Broth and Sauce

  • ½ cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 14.25 ounces chicken stock (or beef stock)

Noodles and Garnish

  • 2 packs ramen noodles (discard seasoning packets)
  • Sesame seeds (optional, for topping)
  • Additional scallions (optional, for garnish)

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat and cook the ground beef until no longer pink, breaking it up as it cooks. Drain excess grease if necessary.
  2. Transfer to Slow Cooker: Pour the browned beef into the basin of a 6-quart slow cooker. Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions.
  3. Prepare Sauce: In a medium bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and chicken stock until well combined.
  4. Add Sauce to Slow Cooker: Pour the prepared sauce into the slow cooker over the beef and vegetables. Stir gently to mix all the ingredients.
  5. Cook in Slow Cooker: Cover the slow cooker and cook on LOW for 4 to 6 hours, allowing flavors to meld and vegetables to soften.
  6. Add Ramen Noodles: Approximately 30 minutes before serving, add the dry ramen noodles (discard the seasoning packets) directly into the slow cooker. Stir frequently to ensure noodles are evenly coated and cook evenly.
  7. Serve: When noodles are tender, ladle the beef ramen into bowls and garnish with additional chopped scallions and a sprinkle of sesame seeds, if desired. Serve hot and enjoy!

Notes

  • Discard seasoning packets from ramen noodles as they contain excess salt and additives not needed for this recipe.
  • If preferred, substitute chicken stock with beef stock to deepen the flavor.
  • Stir noodles periodically after adding to prevent them from clumping or sticking to the slow cooker.
  • Adjust cooking time based on your slow cooker model; check vegetables and beef for tenderness.
  • For a spicier version, add a dash of chili flakes or sriracha to the sauce mixture.
