Peanut Brittle:

  • 2 cups creamy peanut butter
  • 1 ½ cups granulated sugar
  • 1 ½ cups light corn syrup
  • 2 tablespoons butter
  • 2 cups peanuts, raw or roasted
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Instructions

  1. Prepare Baking Sheet: Butter a large baking sheet and set aside.
  2. Melt Peanut Butter: In a double boiler over hot water, melt the peanut butter.
  3. Cook Sugar Syrup: In a large saucepan, combine sugar, corn syrup, and water. Cook until 275°F on a candy thermometer.
  4. Add Butter and Peanuts: Reduce heat, add butter, then stir in peanuts and cook until brown and 300°F.
  5. Finish the Mixture: Remove from heat, add baking soda in water, then mix in vanilla and warm peanut butter.
  6. Pour and Cool: Quickly pour the mixture onto the baking sheet, spreading it thin. Let cool completely.
  7. Store: Break into pieces and store in an airtight container.
