Instructions

  1. Prepare the chicken: Using a paper towel, pat the chicken pieces dry to remove excess moisture. This will help the chicken brown beautifully.
  2. Create the glaze: In a medium-sized bowl, whisk together the soy sauce, honey, grated fresh ginger, minced garlic, and rice vinegar until well combined.
  3. Make a slurry: In a separate cup, mix 1 tablespoon of cornstarch with 2 tablespoons of ice-cold water, stirring until smooth. This will be the thickening agent for the sauce.
  4. Cook the chicken: Heat olive oil in a large skillet or wok over medium-high heat. Place the chicken pieces in a single layer and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.
  5. Soften glaze: Pour the soy glaze mixture into the hot skillet and bring to a simmer. Gradually add the cornstarch slurry, stirring continuously for 1-2 minutes until the sauce thickens to a sticky consistency.
  6. Mix: Return the cooked chicken to the skillet and toss with tongs until all pieces are evenly coated with the soy glaze.
