4.7 from 279 reviews

A flavorful and spicy Korean-inspired ground venison dish cooked with a sweet and savory sauce, crisp snap peas, and aromatic garlic and ginger. Perfect served over white rice for a hearty and satisfying meal.

Ingredients

Scale

Main Ingredients

  • 2 tsp. sesame oil
  • 1 pound ground venison
  • ½ cup low-sodium soy sauce
  • ½ cup brown sugar
  • ¼ cup honey
  • 1 tsp. red pepper flakes
  • ½ cup diced white onion
  • 1 TBSP minced garlic
  • 1 tsp. grated ginger
  • 8 ounces snap peas, (washed)

Instructions

  1. Heat the skillet and cook venison. Place the sesame oil in a large skillet over high heat. Add the ground venison and cook it until browned and crispy, breaking it up as it cooks to ensure even browning.
  2. Prepare and add the sauce. In a small bowl, whisk together the soy sauce, brown sugar, honey, red pepper flakes, diced white onion, minced garlic, and grated ginger. Pour this mixture over the browned venison, stirring well to coat all the meat thoroughly.
  3. Simmer and reduce sauce. Bring the mixture to a simmer and continue cooking, stirring occasionally, until the sauce thickens enough to coat the meat with a glossy finish. This should take about 8 to 10 minutes. About 2 minutes before finishing, stir in the washed snap peas to retain their crunch and vibrant color.
  4. Serve. Once the sauce is thick and snap peas are just tender, remove from heat. Serve the spicy Korean venison hot, accompanied by white rice to complete the dish.

Notes

  • Use low-sodium soy sauce to control salt levels and balance flavors.
  • Adjust red pepper flakes to your preferred spice tolerance.
  • Snap peas can be substituted with sugar snap peas for extra sweetness and crunchiness.
  • For a gluten-free option, substitute soy sauce with tamari.
  • Ground venison can be replaced with other ground game meats or lean beef if unavailable.
