Ingredients

Scale

Chicken Marinade

  • 1 lb chicken breast or thighs, thinly sliced
  • 12 tsp soy sauce
  • 1 tsp honey
  • 1 clove garlic, minced

Noodles and Vegetables

  • 8 oz noodles (egg noodles, udon, or rice noodles)
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • Other vegetables as desired

Sauce

  • 3 tbsp soy sauce
  • 12 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch or arrowroot
  • 23 cloves garlic, minced
  • ¼ cup water or chicken broth

Garnishes

  • Sesame seeds
  • Chopped scallions
  • Chili flakes

Instructions

  1. Prep Ingredients: Slice the chicken breasts or thighs thinly and prepare the vegetables by slicing the bell pepper, broccoli florets, carrot, and any additional vegetables you wish to use. Cook the noodles according to the package instructions, then drain and set them aside.
  2. Marinate Chicken: Combine the thinly sliced chicken with 1 to 2 teaspoons of soy sauce, 1 teaspoon of honey, and 1 minced clove of garlic. Let the chicken marinate for 15 to 30 minutes to absorb the flavors.
  3. Make Sauce: In a bowl, whisk together 3 tablespoons of soy sauce, 1 to 2 tablespoons of honey or maple syrup, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 2 to 3 cloves of minced garlic, 1 teaspoon of cornstarch or arrowroot, and ¼ cup of water or chicken broth until the sauce is smooth and well combined.
  4. Cook Chicken: Heat a small amount of oil in a wok or large skillet over medium-high heat. Add the marinated chicken and sear it, cooking for 4 to 5 minutes or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside.
  5. Stir-Fry Vegetables: In the same pan, quickly sauté the prepared vegetables for 2 to 3 minutes until they are crisp-tender but still vibrant and fresh.
  6. Combine Noodles & Sauce: Return the cooked chicken to the pan with the vegetables. Add the cooked noodles and gradually pour the prepared sauce over the mixture. Toss everything thoroughly to evenly coat the noodles and ingredients. Continue to cook for 1 to 2 minutes until the sauce thickens slightly and the noodles become glossy and sticky.
  7. Serve: Plate the sticky garlic chicken noodles and garnish with sesame seeds, chopped scallions, and chili flakes to your liking. Serve immediately while hot.
  8. Pro Tip: Add the sauce gradually to prevent clumping and ensure the noodles are evenly coated with the flavorful sticky garlic sauce.

Notes

  • Use your favorite noodles such as egg noodles, udon, or rice noodles depending on your preference.
  • Feel free to add any other vegetables like snap peas, mushrooms, or baby corn for extra flavors and textures.
  • Adjust honey or maple syrup according to your desired sweetness level.
  • For a spicier kick, increase chili flakes or add fresh chopped chili peppers.
  • Marinating the chicken improves flavor but can be skipped if short on time.
  • To keep vegetables crisp, avoid overcooking during stir-frying.
