For the Strawberry Puree:

  • 100 g strawberry cubes
  • 1 tbsp water
  • 1 tbsp sugar

For the Dough:

  • 1 cup tapioca starch
  • Extra tapioca starch for dusting

Instructions

  1. Prepare Strawberry Puree: Add strawberry cubes, sugar, and water to a blender and blend until smooth to create the strawberry puree.
  2. Make the Dough: Pour the strawberry puree into a small pot and heat it until boiling. Once boiling, turn off the heat and quickly add half of the tapioca starch, mixing for 6-7 seconds. Then incorporate the remaining starch. When the mixture is still hot, knead it first with a scraper and then with your hands until warm and almost smooth.
  3. Shape the Pearls: Divide the dough into four pieces and roll each piece into a long log. Pinch off small portions and roll them into round balls to form the boba pearls. Dust them generously with tapioca starch to prevent sticking, then sift off the excess starch.
  4. Cook the Pearls: You can cook immediately or freeze the pearls. To cook, bring a large pot of water to a boil and add the pearls. Simmer over medium-high heat for about 15 minutes until the pearls float. Turn off the heat, cover, and let them sit for an additional 15 minutes. For larger pearls, cook for 20 minutes and rest for 20 minutes.
  5. Instant Pot Method (Optional): Add boba pearls and water to the Instant Pot. Secure the lid, close the vent, and set to manual high pressure for 5 minutes.
  6. Soak and Serve: Transfer cooked pearls to iced water to cool, then strain and mix with syrup or honey before serving.
