Ingredients

Scale

Brownie Base

  • 1 box strawberry cake mix (such as Pillsbury, about 15.25 oz/432g)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)

Strawberry Frosting

  • 3/4 cup powdered sugar (90g)
  • 2 tablespoons strawberry preserves (40g; Bonne Maman recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15g; optional)

Instructions

  1. Prepare the Pan
Preheat your oven to 350°F (175°C). Spray an 8×8-inch baking pan with nonstick spray or line it with foil or parchment paper for easy removal. Set aside.
  2. Mix the Batter
In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Stir until a thick batter forms and all ingredients are fully incorporated.
  3. Bake the Brownies
Press the batter evenly into the prepared pan. Bake for 18-22 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake for fudgy brownies. Allow the brownies to cool completely in the pan.
  4. Prepare the Frosting
In a small bowl, whisk together powdered sugar, strawberry preserves, milk, and cream cheese (if using) until smooth and creamy. Adjust consistency with a touch more milk if needed.
  5. Frost and Serve
Spread the strawberry frosting evenly over the cooled brownies. Allow the frosting to set for about 10 minutes before cutting into squares and serving.

Notes

  • For a thicker brownie, use a smaller baking pan or double the recipe for a 9×13-inch pan.
  • Cream cheese in the frosting is optional but adds an extra tangy creaminess.
  • Make sure brownies are fully cooled before frosting for best results.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a longer shelf life.
  • Swap strawberry preserves for raspberry or a mixed berry jam for a fun flavor variation.
