Brownie Base
- 1 box strawberry cake mix (such as Pillsbury, about 15.25 oz/432g)
- 2 large eggs
- 1/3 cup vegetable or canola oil (80 ml)
- 1 teaspoon vanilla extract (5 ml)
Strawberry Frosting
- 3/4 cup powdered sugar (90g)
- 2 tablespoons strawberry preserves (40g; Bonne Maman recommended)
- 1 ½ tablespoons milk (22 ml)
- 1 tablespoon cream cheese (15g; optional)
- Prepare the Pan
Preheat your oven to 350°F (175°C). Spray an 8×8-inch baking pan with nonstick spray or line it with foil or parchment paper for easy removal. Set aside.
- Mix the Batter
In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Stir until a thick batter forms and all ingredients are fully incorporated.
- Bake the Brownies
Press the batter evenly into the prepared pan. Bake for 18-22 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake for fudgy brownies. Allow the brownies to cool completely in the pan.
- Prepare the Frosting
In a small bowl, whisk together powdered sugar, strawberry preserves, milk, and cream cheese (if using) until smooth and creamy. Adjust consistency with a touch more milk if needed.
- Frost and Serve
Spread the strawberry frosting evenly over the cooled brownies. Allow the frosting to set for about 10 minutes before cutting into squares and serving.
Notes
- For a thicker brownie, use a smaller baking pan or double the recipe for a 9×13-inch pan.
- Cream cheese in the frosting is optional but adds an extra tangy creaminess.
- Make sure brownies are fully cooled before frosting for best results.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a longer shelf life.
- Swap strawberry preserves for raspberry or a mixed berry jam for a fun flavor variation.
